Whole Wheat Bread

2 T. yeast
5 cups warm water
1/3 cup honey
2 eggs
1/3 cup oil
1/3 cup potato flakes
7 cups whole wheat flour
1 T salt
4-5 cups unbleached flour

Dissolve yeast according to package directions. mis all ingredients except unbleached flour. Bring to a sponge-like consistency. Let rest 10 minutes. Add remaining flour gradually as needed to make a soft dough. Knead on floured board. Cover with plastic wrap and let rise until double in size. Punch down and shape into 4 loaves. Place in greased pans. Cover and let rise again until double in size. Bake at 350 degrees for 40 minutes (I have found that my oven cooks a little hot, so for my oven it is 37 minutes). When the bread comes out of the oven remove from pans and place on a towel to cool. If you want you can rub a stick of butter across the top of the bread.
